Cupcakes!

I love, love, love cupcakes. There is a great shop on Belmont called Saint Cupcake that is dedicated solely to the making of scrumptious cupcakes. On days where it just feels like a treat is needed, I head there.

Today, I felt like making my own scrumptious treats. In an effort to remain plastic-less, I had to make them from scratch (both cake box and frosting container make use of the dreaded plastic). I again referred to the greatest baking book there ever was: Baking Illustrated, by Cook's Illustrated.

Here's how they turned out! (I added the doily for a fancy effect.)

I'm mainly trying to stay away from disposable, one-time use plastics. Tupperware is kind of in a gray area; it's reusable to a point but ends up in the same place as other plastics when it is thrown out.

so, if you make cupcakes using products that are in plastic containers (ie. vegetable oil, cocoa powder), does that count? is that a gray area?

i am trying to keep track of all the plastic i use in a day, and it's looking close to impossible. i mean, what do you do about butter? cheese? milk? tortilla chips?!? even beans and rice come in plastic bags. i'm doomed.

I just want it to be known that I would have much rather been eating those cupcakes than heavy lifting! But we did get a lot done... Sorry we missed you, They look wonderful!

The butter I used came in a box and was wrapped in wax paper. The flour and sugar came in reinforced paper bags, and the vanilla in a glass container. All was accounted for...except the sour cream and chocolate chips. We had both on hand, so I didn't search for a plastic-less option. Off the top of my head sour cream comes in nothing else, so I would get it in a large enough container and use it for lunches or freezing left-overs. And instead of buying chocolate chips, I could have gotten the chocolate squares and shredded them. But, you're right somethings are impossible, like sour cream. I let you know when I find solutions to these dilemmas :)

you are so right! i wasn't thinking of the creative ways to do it...like, there's one brand of tortilla chips that is sold in a paper bag! really, i was just worried i'd have to give up chips and salsa.

butter in a box. genius! what will they come up with next?

Just out of curiosity, what's fueling this strong drive to get away from plastic? Did you read something or hear about something recently?
